Homemade Hash Brown Casserole

Ingredients
  • 1/2 cup diced green pepper
  • salt and pepper
  • green onions
  • 4 Tablespoons flour
  • 1 cup milk
  • 1 cup chicken broth
  • 1 cup sour cream
  • 4 Tablespoons butter
  • 1/2 cup diced onion
  • 1/2 cup diced red pepper
  • 4 cups shredded cheddar cheese, divided
  • 3/4 cup crushed crackers (we use Chicken in a Biscuit) (optional)
  • 1 - 30 ounce bag frozen shredded hash brown potatoes, thawed

Instructions
  1. Preheat oven to 375 degrees. Spray a 9x13 pan with nonstick spray.
  2. Melt the butter in a large saucepan. 
  3. Add the onions and saute for 2 minutes. 
  4. Add the green and red peppers and cook for another 2 minutes.
  5. Sprinkle the flour over the mixture and stir in. 
  6. Stir and cook for an additional minute.
  7. Whisk in the milk and broth slowly. 
  8. Cook for a few minutes until thickened slightly.
  9. Stir in the sour cream and 2 cups of cheese until melted and creamy.
  10. Stir in the thawed potatoes until coated. 
  11. Season to taste with salt and pepper. Stir in 1 more cup of cheese.
  12. Pour into prepared pan. 
  13. Sprinkle the remaining cheese on top. 
  14. Top with the cracker crumbs if desired.
  15. Cover with foil and bake for 30 minutes. 
  16. Uncover and cook 10 minutes longer. 
  17. Top with green onions and serve hot. Serves 12.
